食材Ingredients 大鸡腿(去骨鸡扒)Chicken chop x2 盐 Salt 2 tsp 糖 Sugar ½ tsp 绍兴花雕酒 Shaoxing wine 200ml 清水 Water 500ml 当归 Angelica x 1 枸杞 Goji berries 1 tbsp 去核红枣 Deseeded red dates x8 青葱 Spring onion 姜 Ginger x 3 slices 胡椒粉 White pepper powder 步骤Steps 1)在锅中加入去核红枣、当归、枸杞、盐、糖、花雕酒和清水,大火煮滚后转小火煮3分钟,置于一旁冷却备用 Add red dates, angelica, goji berries, salt, sugar, rice wine and water to a pot. Bring to a boil over high heat, then reduce to low heat and simmer for 3 minutes. Set aside to cool. 2)用刀背不停敲打鸡扒肉,以便之后更有效腌制和卷起鸡肉 Continuously tap the chicken chop with the back of the knife to help marinate more effectively and easy to roll the chicken later. 3)加入少许盐、胡椒粉、1汤匙花雕酒、姜和葱,用手搓揉腌制鸡肉(最少30分钟) Add some salt, white pepper powder, 1 tbsp shaoxing wine, ginger and spring onion, rub with your hands and marinate the chicken (at least 30 minutes) 4)把姜和葱拿出,鸡皮朝下把鸡扒肉放在锡纸上,用手卷到紧紧,头尾两端扭紧(像糖果) Take out the ginger and spring onion, put the chicken with skin face down on the aluminium foil, roll it tightly with your hands, and twist the head and tail (like candy) 5)预热小方u002F小方Plus,放进去蒸煮110度u002F20分钟,取出后放入冰水中降温 Preheat Fotile One Oven or One Oven Plus, steam it at 110°Cu002F20 minutes, take it out and put it in ice water to cool down. 6)打开锡纸,把完全冷却的鸡肉卷放入已冷却的料汁中,盖起来冷藏一晚 Unpack aluminium foil, transfer chicken rolls into the prepared liquid. Refrigerate overnight 7)第二天,把鸡肉卷切片(大概1公分),摆在盘中,加入红枣和枸杞,把料汁倒上后用葱丝点缀,即可享用! On the next day, cut chicken rolls into slices (about 1 cm), place them on a plate, add red dates and goji berries, pour the liquid over and garnish with shredded spring onions.
